The Original Carbonara: Pure Simplicity
Unbeknownst to many, the original, traditional Carbonara recipe beloved throughout Italy is the purest expression of fresh, healthy eating.
Whilst westernised versions have popularised a chaotic mess of fresh cream, bacon, mushrooms, onions, garlic, and more, the real deal is in fact comprised of a mere four ingredients: spaghetti, pancetta, eggs, and Parmesan cheese. Yes, that’s it! No ostensibly fat-filled ingredients, no mass of vegetables to chop, no mess: just pure simplicity.
A masterpiece of Italian cuisine that also makes for a quick, easy, and delicious meal to make for the family following a busy day.
Ingredients:
220g Spaghetti
25g Pancetta cut into small cubes
2 eggs
50g Parmesan cheese (or pecorino cheese) finely grated
Fresh ground black pepper to taste
The below recipe produces 2 portions.
Method:
Heat a large pan of salted water.
Place the spaghetti in the boiling water. Do not break the spaghetti: simply immerse the spaghetti in the water by slowly pressing it down. As it softens, it will sink in.
Meanwhile, lightly beat the eggs in a large bowl, add the grated cheese, and black pepper according to taste. Gently fry the cubed pancetta in a pan.
When the spaghetti is ready (al dente is ideal), drain it, and add it to the pan with the pancetta. Mix well, and take off the heat.
Once the pan has cooled a little, add the egg and cheese mixture, and stir thoroughly.
Serve immediately.
